Ingredients
- 8 cups chicken stock (homemade or store bought)
- 2 packets Lipton Onion Soup Mix
- 1-2 cups cooked shredded or chopped chicken
- 4 or more cups fresh spinach (or frozen spinach squeezed dry)
- 1 cup frozen peas
- 1 cup frozen corn
- 4-5 oz. your favorite pasta
- ¼ cup Mixed Herb Pesto (see our recipe and video)
- Sprinkle of salt & pepper
Preparation Steps
- Place chicken stock in stock pot, sprinkle in the onion soup mix, bring to a boil. Allow to simmer 10 minutes.
- In a separate pot bring 8 cups water to a boil. Cook your favorite pasta according to package directions, then add to chicken stock mixture.
- Add the spinach, cooked chicken, peas and/or corn and bring to boil. Turn off the heat and stir in the pesto.
Serve the easy soup with whole grain bread and a tossed salad!
