Ingredients
- 6 tablespoons butter
- 4 medium onions, chopped
- 4 cloves garlic, chopped
- 24 oz canned plum tomatoes or pureed tomatoes
- 4 cups low sodium chicken stock or homemade vegetable stock
- 2 teaspoons sea salt
- ¼ teaspoon freshly ground black pepper
Preparation Steps
- Melt butter in stockpot over medium-low heat. Add onion and garlic, cook, stirring until onions have softened, about 15 minutes.
- Add tomatoes, vegetable stock, salt and pepper, bring to a boil. Reduce heat to low and cook until tomatoes, onions, and garlic are soft, 10-20 minutes.
- Use immersion blender until smooth and creamy. Or, working in small batches transfer soup to blender and puree until smooth.
- Serve Tomato Soup with a grilled cheese sandwich for a classic meal reminiscent of your childhood!
