Tomato Soup

Makes 7 cups

Ingredients

  1. 6 tablespoons butter
  2. 4 medium onions, chopped
  3. 4 cloves garlic, chopped
  4. 24 oz canned plum tomatoes or pureed tomatoes
  5. 4 cups low sodium chicken stock or homemade vegetable stock
  6. 2 teaspoons sea salt
  7. ¼ teaspoon freshly ground black pepper

Preparation Steps

  1. Melt butter in stockpot over medium-low heat. Add onion and garlic, cook, stirring until onions have softened, about 15 minutes.
  2. Add tomatoes, vegetable stock, salt and pepper, bring to a boil. Reduce heat to low and cook until tomatoes, onions, and garlic are soft, 10-20 minutes.
  3. Use immersion blender until smooth and creamy. Or, working in small batches transfer soup to blender and puree until smooth.
  4. Serve Tomato Soup with a grilled cheese sandwich for a classic meal reminiscent of your childhood!
